Daisy Cakes
Freyja is becoming a bit of a fan of baking, which is great because it is something that I love to do. I have never really been a fan of packet cake mixes as it is so easy making simple fairy cakes and I think there are lots of important skills that can be learnt in measuring out ingredients and such like. However, the Green’s Daisy Cakes Kit caught my eye in the supermarket and I decided it would be worth trying.
Freyja poured the cake mixture into the bowl and helped measure out the water, but was having nothing to do with cracking the egg into it! Once I had done this, she set to work mixing it all together – with the occasional question about whether she could try the mixture yet. When she had done this she spooned the mixture into the cake cases. My very determined 3 year old was not going to let me do this and as a result we were a few short of the 24 that the kit was supposed to make. During the ten minutes that the cakes were cooking, Freyja enjoyed licking the bowl out!

We then started to make the daisies to decorate the tops of the cakes. We rolled out the royal icing provided but Freyja had difficulty retrieving the flowers once she had punched them out with the cutter that came with the kit. Thankfully, amongst my “baking stash” I had a similar shaped cutter with a little “plunger” on it which pushed out the shape for us. Pretty soon we had more than enough daisies, and placed a little yellow ball in the middle to form the centre of the flower.

We left the cakes and daisies overnight in an airtight box and came back to finish off the decoration the next day. I helped Freyja make up some yellow icing which she spooned on top of each cake and then placed a daisy on top of this. I’m glad we made a few extra as Freyja broke a few in the process. Of course I let her eat these after we had finished, so she wasn’t too upset by this.

Freyja was really pleased with how her finished cakes looked, and more importantly how they tasted!
